Dewberry Hills Farms BBQ Chicken with Grilled Okra
Roasted New and Sweet Potatoes with Chives
We love to grill because it means easy cleanup and you get to enjoy a beer and kick back while your dinner cooks! My husband is the master of trying out new things on the grill. He has even figured out how to grill bacon!
BBQ Chicken
One whole Dewberry Hills Farms chicken (fresh meat case at Wheatsville) *The extra chicken is delicious on sandwiches
Annie's Organic BBQ Sauce (gluten-free) or Stubb's BBQ Sauce
1. Cut the spine and neck out of the chicken.
2. Start breast side down so that cavity is exposed to the top of the grill.
3. Grill for approximately 20-30 minutes.
4. Baste the backside every 10 minutes with BBQ sauce.
5. Flip chicken over and baste every 10 minutes for another 20-30 minutes.
6. Grill until chicken is firm (should bounce back when pushed gently) but still moist.
Grilled Okra
one large bag of okra (Johnson's Backyard Garden)
salt & pepper
Texas Olive Ranch olive oil
garlic powder
1. Rinse okra and dry.
2. In a large bowl, drizzle with olive oil, garlic powder, salt and pepper.
3. Toss until coated.
4. Put okra directly on the grill and turn once when they develop grill marks.
5. Once the other side develops grill marks, remove from grill.
Roasted New and Sweet Potatoes with Chives
sweet potatoes from Johnson's Backyard Garden (Austin Farmers' Markets on Wednesday and Saturday)
new potatoes from Johnson's Backyard Garden (Austin Farmers' Markets on Wednesday and Saturday)
salt & pepper
small yellow onion (chopped) from Johnson's Backyard Garden (Austin Farmers' Markets on Wednesday and Saturday)
2 cloves of garlic (minced) Milagro Farms at Austin Farmers' Market on Wednesday and Saturday
chives (our garden)
Texas Olive Ranch olive oil
1. Cut up the potatoes and microwave for 1 minute per cup or so.
2. Mix potatoes in a bowl with onion, garlic, salt and pepper and oil.
3. Add olive oil to a pan, add potato mixture and cook until potatoes are brown and crispy.
4. Add freshly chopped chives.
