Early Spring Vegetable Plate


What's on the Early Spring Vegetable Plate?

Carrots, beets, turnips and brussels sprouts were in our CSA box from Johnson's Backyard Garden and are available at Austin Farmers' Markets on Wednesdays and Saturdays. 


Turnip Mashed Potatoes 
1. Boil chopped potatoes and peeled and chopped turnips. 
2. When the potatoes and turnips are fork tender, drain water and add to a bowl. 
3. Using a hand masher, mash turnips and potatoes and add butter (or Earth Balance for non-dairy alternative) and milk (or MimicCreme for non-dairy alternative), salt and pepper. Add chives or garlic for even more flavor.
