Green Cabbage and Apple Slaw


We have several cabbage heads in our fridge from our farm box and two growing in our garden. We have been trying out several recipes to take advantage of the cabbage abundance! 

We served our slaw with Applewood Smoked Axis Chops




Green Cabbage and Apple Slaw

one green cabbage head (Johnson's Backyard Garden)
one bunch green onions Johnson's Backyard Garden)
5 small tart apples
1/4 cup sunflower oil
2/3 cup apple cider vinegar
2 Tbsp mustard seeds
sea salt and pepper

1. Slice the cabbage and apples thinly or use the slicing attachment on your food processor and add to a large bowl. 
2. In a small bowl, add sunflower oil, apple cider vinegar, mustard seeds, salt and pepper and whisk to combine. 
3. Add to the larger bowl and make sure the cabbage and apples are coated. Leave in the fridge for an hour or two before serving. It tastes even better the next day!
